What Sopho Baked: Rocky Road Cupcakes...
Hi everyone!So I thought i'd try something a little different on here, something that i've actually been meaning to do for months and months, so finally, i'm going to do a little recipe post for you all.
I've always loved baking, to the point where I even have a cupcake tattoo on my ribcage. I get A LOT of cupcake related cookbooks and gifts for birthdays and christmases and theres nothing that I find more satisfying than an afternoon spent creating lovely little treats for everyone around me. This particular recipe i've never tried before but it turns out that it's yummy and super easy (if a little messy!) to do. It also combines two pretty tasty elements, Rocky Road (Dans mum makes the BEST one ever!) and cupcakes, absolutely perfect!
What you'll need:
For the cupcakes...
115g butter
100g caster sugar
2 eggs
115g self raising flour
3 tablespoons of cocoa powder
3 tablespoons milk
50g mini marshmallows
50g white chocolate chips
For the topping...
200ml double cream
100g chocolate (I used Dairy Milk)
Mini marshmallows
Chopped up Glace cherries
White chocolate chips
Pop the oven on at 180 degrees and line your muffin tin with some pretty cases.
Cream the butter and the sugar together in a bowl until it's all combined and looking fluffy. Add in the eggs one at a time. Sift the flour and the cocoa powder in and fold the mixture. Pop the milk in along with the marshmallows and the chocolate chips.
Divide the mixture between the cake cases and place in the oven to bake for around 18 minutes. Cool on a wire rack when done.
While your cakes cool, pour the double cream into a saucepan and heat until very nearly boiling. This is where it gets tricky as you also need to be melting your chocolate in a bowl over a pan of hot water ready to combine with the cream. Once it's fully melted add the chocolate to the cream, keep stirring to avoid it separating.
Take the mixture off the heat and leave to stand for about 5-10 mins. Stir until it's all creamy looking and then leave to cool. After it's fully cooled your topping should be thick and glossy.
When it comes to decorating, it's super easy. Just drizzle the chocolate topping over the cooled cupcakes and add your cherries, marshmallows and some chocolate chips. You could also put chopped up nuts or whatever else you fancy and you're done.
Put the kettle on, make a cup of tea and enjoy your handiwork!
